Bring water to boil and let it stand for three minutes. The water temperature should be between 165-170 degrees. Pour water over tea leaves (about 1 tsp per 8-12oz), allowing leaves to unfurl. Since Oolong tea can acquire a bitter taste when too strong, steep for two minutes at most. Remove the leaves from the tea before drinking.
